There's a moment every September when the air shifts just enough that I find myself standing in my kitchen, craving something warm and spiced and completely unhurried. Not a drive-through version in a paper cup β€” the kind you make yourself, in your own mug, in your own kitchen, with nowhere to be.

That's when I make my Pumpkin Spice Latte Mix.

This isn't a single-serving recipe. This is a make a big batch on Sunday and enjoy it all week kind of recipe β€” and honestly, that's exactly how I like to cook now. My kids are grown, my mornings are mine again, and I've stopped making things in quantities meant to feed a crowd.

What You'll Need

  • 1 small can pumpkin puree
  • 1 cup Coffee Mate powder
  • 1 cup sugar (or swap some or all for Splenda if you prefer)
  • 3 cups water
  • 2 tablespoons pumpkin spice mix
  • 2 tablespoons vanilla extract

How To Make It

  1. Add all ingredients to a blender
  2. Blend until completely smooth and combined
  3. Pour into a jar or pitcher and store in the refrigerator for up to 7-10 days

To serve: Stir or shake well, add 2-4 tablespoons to your hot coffee, and adjust to taste. Top with whipped cream and a pinch of pumpkin spice if you're feeling fancy β€” and you should be. πŸ‚


Easy Variations

Creamy version: Swap the Coffee Mate powder for vanilla creamer for an even richer, creamier result.

Lower sugar version: Replace some or all of the sugar with Splenda β€” it blends beautifully and you honestly can't tell the difference in your morning cup.

Iced PSL: Pour over ice with cold brew. Perfect for those September days that can't quite decide if they're summer or fall.
